Ingredients

1 ounce dried porcini mushrooms

4 chicken thighs , boned , skinned and cut into bite-sized pieces
sea salt & freshly ground black pepper
2 garlic cloves , peeled and finely sliced
12 ounces mixed fresh mushrooms , cleaned and torn
7/8 cup white wine
1 lb dried spaghetti
2 cups heavy cream
7 ounces parmesan cheese , grated
1 sprig fresh basil , leaves picked

Instructions

1.Preheat the oven to 350°F (180°C).
2.Place the dried porcini mushrooms in a small bowl and pour boiling water over them. Let them soak for 20 minutes before draining and roughly chopping.
3.Heat the oil in a large frying pan and add the chicken pieces. Season with salt and pepper and cook until golden brown and cooked through. Remove from the pan and set aside.
