1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon fresh ground pepper
1 lb boneless skinless chicken breast , cut into 1-inch chunks
sea salt
1 1/2 cups chicken broth
1 1/4 cups tomato sauce
2/3 cup lentils
2 bay leaves
1/3 cup plain low-fat yogurt
1/4 cucumber , thinly sliced
lemon juice
mango chutney ( optional )
fresh cilantro ( optional )

Instructions

1.Heat olive oil in a large saucepan over medium heat and cook onions for 5-10 minutes until golden brown. Add garlic, curry powder, nutmeg, cinnamon and pepper and cook for 1-2 minutes until fragrant.
2.Add chicken and season with salt. Cook for 5-7 minutes until lightly browned.
3.Add chicken broth, tomato sauce, lentils and bay leaves and bring to a boil. Reduce heat to low, cover and simmer for 45 minutes to 1 hour or until lentils and chicken are tender.
4.In a small bowl, mix together yogurt, cucumber, lemon juice and salt. Refrigerate until ready to serve.
5.Serve curry over rice with cucumber yogurt on the side. Top with fresh cilantro and mango chutney for added flavor, if desired.
