Ingredients

1 chicken breast , boneless and skin off
400 g streaky bacon
3 tablespoons ricotta cheese
1 1/2 cups Baby Spinach
1/4 cup red onion , diced
salt & freshly ground black pepper
5 red potatoes , peeled and chopped
100 -200 ml milk
1 -2 tablespoon butter
fresh ground white pepper
1 tablespoon butter
1 tablespoon canola oil
1/2 cup white wine
1/2 cup cream
1 cup green beans , tops removed

Instructions

1.In a large skillet, cook bacon until crispy, remove from pan and crumble.
2.In the same skillet, cook chicken until browned on both sides.
3.Add red onion to the skillet and sauté for 3-5 minutes.
4.Add spinach, crumbled bacon, salt, and pepper to the skillet and cook until spinach is wilted.
5.In a pot, boil diced potatoes until they are soft.
6.Mash potatoes with milk, butter, and white pepper to taste.
7.In the same skillet used for chicken, heat butter and canola oil and sauté green beans until just tender.
8.Deglaze skillet with white wine and scrape any brown bits from the bottom of the pan.
9.Add cream to the skillet and bring to a boil, stirring constantly.
10.Serve chicken and bacon mixture on top of mashed potatoes, with green beans on the side. Enjoy!
