Ingredients

1 tablespoon vegetable oil
4 ounces andouille sausages , cut into 1/4-inch dice
1 lb chicken breast , cut into 1/4-inch dice
1/2 cup chopped onion
1 tablespoon chopped garlic
salt
cayenne
1/4 cup water
1 cup sweet barbecue sauce
1 tablespoon chopped parsley
3 tablespoons grated parmigiano-reggiano cheese
4 sheets phyllo dough

Instructions

1.Heat vegetable oil in a large skillet over medium heat.
2.Add diced andouille sausages and saute for 2-3 minutes until browned and crispy.
3.Season chicken breast with salt and cayenne pepper, add to the same skillet and cook until browned.
4.Add chopped onion and garlic to the skillet and cook until onions become translucent.
5.Pour in 1/4 cup of water and sweet barbecue sauce. Stirring to coat chicken and let it simmer for 10-15 minutes.
6.Remove skillet from heat and stir in chopped parsley and grated parmigiano-reggiano cheese.
7.Preheat oven to 375 degrees while assembling the strudels. Lay one sheet of phyllo dough on a clean work surface and lightly coat with vegetable oil. Place a second sheet of phyllo over the first sheet and repeat until you have 4 layers.
8.Cut the sheets into thirds. Use a slotted spoon to place the chicken mixture on the bottom end of each strip, leaving about 1/2 inch of space on each side.
9.Roll up the phyllo dough, tucking in the sides.
10.Lightly coat the top of each roll with vegetable oil and place them on a baking sheet lined with parchment paper.
11.Bake in oven for 25 minutes or until golden brown and crispy.
