Ingredients

1 cup rice
9 cups water
1 cup whole milk
1 cup sweetened condensed milk
1 cup evaporated milk
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
5 tablespoons sugar
1 pinch salt
1 stick cinnamon
ground cinnamon ( to taste )
Chicha De Arroz is a traditional, creamy and sweet beverage popular in many Latin American countries. It is made from rice cooked in water with cinnamon stick and then blended with milk and sugar. Instructions

1.Rinse the rice thoroughly and add it to a large pot with the water, cinnamon stick and salt. Bring to a boil over medium-high heat and stir occasionally.
2.Once boiling, turn the heat down to medium-low and let it simmer for 45-50 minutes or until the rice is very soft and breaking apart.
3.Remove the cinnamon stick and use an immersion blender or transfer small amounts of the rice and water mixture to a blender to blend until smooth.
4.Strain the rice mixture through a cheesecloth or fine mesh strainer to remove any remaining rice pieces.
5.Return the mixture to the pot, and add in the sweetened condensed milk, evaporated milk, whole milk, extracts, and sugar. Whisk until well combined.
6.Place the pot back on the stove over medium-low heat and cook for 10-15 minutes or until heated through, stirring occasionally.
