Instructions

1.In a large pot, bring 8-10 cups of water to a boil.
2.Add pressed garlic, sliced onion, diced tomatoes, sliced carrots, sliced celery, diced zucchini, diced squash, diced potatoes, and shredded cabbage to the pot.
3.Add chopped cilantro and a bay leaf and season with salt and pepper.
4.Add chicken breasts to the pot and simmer for 30-40 minutes or until the chicken is cooked through.
5.Remove the chicken breasts from the soup and shred with a fork.
6.Return the shredded chicken to the soup and discard the bay leaf.
7.Serve with a squeeze of lime, chopped onion, cubed avocado, crushed red pepper flakes, and cilantro on top.
