Ingredients

1/2 cup onion , chopped
1 garlic clove , minced
1 tablespoon butter
8 ounces reduced-fat sour cream
3 tablespoons all-purpose flour
1 cup chicken broth
1/4 teaspoon pepper
1 cup reduced-fat Mexican cheese blend , shredded
2 cups imitation crabmeat , coarsley chopped ( or shrimp )
8 flour tortillas , warmed
1/2 cup tomatoes , diced
1/2 cup green onion , chopped
Chi Chi's Seafood Enchiladas are a delicious twist on classic enchiladas. Made with a creamy seafood filling, these enchiladas are bursting with flavor. Shrimp or crab can be used in the recipe, depending on your personal preference. They are perfect for a family dinner or a special occasion. Serve with a side of rice or beans.

Instructions

1.Preheat your oven to 375 degrees F.
2.In a medium skillet, cook the onion and garlic in butter until the onion is tender.
3.In a small bowl, stir the sour cream and flour together. Add to skillet.
4.Stir in chicken broth and pepper. Cook until thick and bubbly, stirring constantly.
5.Remove from heat and stir in 1/2 cup of cheese until melted and smooth.
6.Add seafood to mixture.
7.Spoon filling onto each tortilla and roll up.
8.Place rolled tortillas seam side down in a greased 9 x 13-inch baking dish.
9.Sprinkle with diced tomatoes, chopped green onion, and remaining cheese.
10.Cover dish with foil and bake for 20-25 minutes or until heated through and cheese is melted.

Shrimp or crab can be used as per your taste.
