250 g Marie biscuits , finely crushed
2 1/2 cups desiccated coconut
250 g glace cherries , red
125 g Copha , chopped
395 g condensed milk
food coloring , 1 drop red ( optional )
80 g Copha
250 g dark chocolate , chopped

Instructions

1.Line a 20cm square cake pan with baking paper.
2.In a large mixing bowl, combine the crushed biscuits, 1 cup coconut, and chopped glace cherries.
3.In a small saucepan, melt the Copha over low heat, then add condensed milk and red food coloring, and stir until well combined.
4.Add the Copha mixture to the biscuit mixture and mix well.
5.Press the mixture into the prepared pan and refrigerate for 20 minutes or until firm.
6.Melt the remaining Copha over low heat and add the chopped chocolate. Stir until the chocolate melts and the mixture is smooth.
7.Spread the chocolate mixture over the slice and sprinkle with the remaining coconut.
8.Refrigerate for another 20 minutes until the chocolate is set.
9.Cut into slices and serve chilled.
