Ingredients

2 1/2 cups flour , plus extra for dusting
1 cup butter , chilled and cut into small cubes
3/4 cup sugar
1 pinch salt
1 lemon , zest of
3 egg yolks , beaten
1/4 cup cherry jam ( can also use strawberry jam as well )
1 lb ripe sweet cherries , washed , pitted and cut in half
powdered sugar , for dusting ( optional )
Cherry Crostata is a simple, rustic Italian dessert that can be enjoyed year-round but especially during cherry season. Instructions

1.Preheat oven to 375°F.
2.In a food processor, pulse flour, butter, sugar, salt and lemon zest until the mixture resembles coarse crumbs.
3.Add in the egg yolks, and pulse until the dough comes together in a ball.
4.Roll the dough out into a disc shape on a lightly floured surface, about 1/4 inch thick.
5.Spread the cherry jam evenly over the dough, leaving a 2-inch border around the edges.
6.Arrange the cherry halves over the top of the jam, again staying within the 2-inch border.
7.Fold the border of the dough over the cherries, pleating it where necessary.
8.Beat the egg yolk in a small bowl with 1 tablespoon of water and brush the border of the dough with the egg wash.
9.Bake for 30-35 minutes, until the crust is golden brown and the cherries are bubbling.
10.Allow to cool for 10 minutes, and transfer to a platter before dusting with powdered sugar (if desired).
