Ingredients

1 reduced-sugar white cake mix ( I used Pillsbury brand in Classic White )
3 egg whites
1 1/4 cups water
1/3 cup canola oil
1/4 cup brewed coffee ( I used Starbucks brand brewed at home )
2 tablespoons Splenda brown sugar blend
1 container mascarpone cheese ( I used Mozzarella Fresco brand )
1/4 cup powdered sugar
1 teaspoon almond extract
1 container whipped topping ( I used Cool Whip brand )
3 cups fresh cherries ( approximately 36 whole cherries )
1 ounce BAKER 'S Semi-Sweet Chocolate , grated
Cherry Cloud Tiramisu is a light and airy twist on the classic Italian dessert. It's made with layers of reduced-sugar white cake, fresh cherries, and a fluffy mascarpone mixture. Topped with grated chocolate, this dessert is a feast for the eyes as well as the taste buds. It's perfect for summer parties or any time you want to impress your guests with a show-stopping dessert.

Instructions

1.Preheat the oven to 350 degrees F.
2.In a large bowl, beat the cake mix, egg whites, water, and canola oil together until well combined.
3.Add the brewed coffee and Splenda brown sugar blend, and mix until smooth.
4.Pour the batter into a 9x13 inch baking pan and bake for 30-35 minutes.
5.Allow the cake to cool completely before assembling the tiramisu.
6.In a medium bowl, whisk together the mascarpone cheese, powdered sugar, and almond extract until smooth.
7.Add the whipped topping and stir until well combined.
8.Remove the pits from the cherries and cut them in half.
9.In a trifle dish or glass bowl, layer the cake, cherry halves, and mascarpone mixture.
10.Repeat the layers until all the ingredients are used up.
11.Top with grated chocolate and refrigerate for at least 1 hour before serving.
