Instructions

1.In a large bowl, whisk egg yolks and Splenda until pale yellow; set aside.
2.In a small saucepan, heat regular sugar and 1/4 cup water over medium heat, stirring constantly until sugar is dissolved.
3.Bring to a boil, then cook, without stirring, until mixture reaches the soft-ball stage, about 240°F on a candy thermometer.
4.Slowly pour the hot sugar syrup into the egg yolk mixture, whisking constantly until completely combined and mixture has cooled to room temperature.
5.Beat in the mascarpone cheese and almond extract until smooth.
6.In a separate large bowl, whip the cream to stiff peaks.
7.Fold whipped cream into cheese mixture until thoroughly combined.
8.In small shallow dish, combine espresso and amaretto.
9.In a 9-inch by 13-inch baking dish, arrange half the ladyfingers so they cover the bottom of the dish.
10.Spoon half the espresso mixture over the ladyfingers, ensuring each biscuit is coated.
11.Spoon half of the cheese mixture over the ladyfingers and smooth with a spatula.
12.Repeat with remaining ladyfingers, espresso, and cheese mixture.
13.Cover and refrigerate tiramisu overnight.
14.Before serving, garnish with cherries and almonds.
