3/4 cup sugar ( for extra special flavor use Lavender Sugar With Vanilla )
1 lemon , juice and zest of , fresh
2 lbs cherries , pitted and stems removed

Instructions

1.In a pot, bring water to a boil.
2.Split vanilla bean and scrape out the seeds, add vanilla bean and seeds to the pot.
3.Add sugar, lemon juice, and zest to the pot.
4.Simmer until sugar is dissolved, then add cherries.
5.Poach cherries on low heat until soft, about 5-7 minutes.
