10 screwpine leaves
2 -3 drops green food coloring
1/2 cup green pea flour ( hoon kway )
5 tablespoons palm sugar
1 tablespoon granulated sugar
4 1/2 cups water
1 coconut , grated
salt

Instructions

1.Blend the screwpine leaves with 1/2 cup of water, then strain the mixture through a cheesecloth or fine mesh strainer.
2.Add green food coloring to the screwpine water.

4.Cook the mixture over medium heat, stirring constantly, until it thickens and turns translucent.
5.Pour the mixture through a large-holed colander into a bowl of ice water.
6.In a saucepan, combine the palm sugar, granulated sugar, and remaining 2 cups of water. Cook over medium heat, stirring constantly, until the sugar dissolves.
7.Add the coconut and simmer for 10 minutes, stirring occasionally.
8.Add a pinch of salt to taste.
9.Divide the pandan noodles and sweetened coconut milk evenly among four bowls. Serve immediately.
