Ingredients

5 cups water
4 chicken legs , loose skin discarded
4 chicken thighs , loose skin discarded
1 cup dried garbanzo beans , soaked in water overnight & drained
1 cup chopped onion
1 stalk celery , with leaves , sliced
1 large carrot , sliced diagonally
1/2 lb zucchini , sliced
1 teaspoon salt , to taste
1/4 teaspoon pepper
1/4 teaspoon ground cumin
1/4 cup fresh coriander , chopped
1/4 cup fresh dill , chopped
1/4 cup lemon juice
4 cups water

2 cups raw rice , well rinsed
1/4 cup corn oil
Chelo Nachodo is a classic Persian dish that combines tender chicken, hearty chickpeas, and fragrant spices. This dish is perfect for a cold winter day or a large gathering with family and friends. Instructions

1.In a large pot, bring 5 cups of water to a boil and add in the chicken legs and thighs. Simmer for 30 minutes.
2.Add in the drained chickpeas, onion, celery, carrot, zucchini, salt, pepper, and cumin. Cover and simmer for another 45 minutes.
3.Remove the chicken from the pot and debone. Shred the chicken and return it to the pot with the coriander, dill, and lemon juice.
4.In another pot, bring 4 cups of water and 1 teaspoon of salt to a boil. Add in the rinsed rice and oil and stir. Cover and simmer for 20 minutes.
5.Serve the chicken and chickpea stew on top of the rice.
