10 large red fresh tomatoes
3/4 large sweet white onion , chopped
4 garlic cloves , chopped
6 dried arbol chiles
3 fresh jalapeno chile , chopped
3 fresh serrano chilies , chopped
3 tablespoons cuervo gold tequila

1/2 teaspoon black pepper
1/2 fresh lime , juice of
1 1/2 tablespoons fresh cilantro
"Salsa Tres Chiles Y Cuervo De Oro" is a Chef Kupinewicz's interpretation of a classic Mexican salsa recipe. This salsa adds a twist of Cuervo gold tequila to the well-known trio of jalapeno, arbol, and serrano chilies, to give it a boost of heat and more depth in flavors. The salsa is made from very fresh ingredients, mainly fresh garlic, red tomatoes, and sweet onions. It is ready in less than 30 minutes, making it the perfect choice for a last-minute addition to your Mexican fiesta. Instructions

1.In a large pot, boil the red tomatoes until they soften and their skin wrinkled. Drain, and allow them to cool.
2.Peel the tomatoes and discard their seeds, then chop the flesh coarsely. Put the chopped tomatoes in a large bowl.
3.In a pan, heat a little oil then briefly fry the garlic and onion until they color golden brown. Add chopped jalapeno, arbol chiles, and serrano chilies, then fry for another minute.
4.Pour the fried mixture into the bowl of chopped tomatoes.
5.Add Cuervo Gold Tequila, salt, black pepper, lime juice, and cilantro to the bowl, mix all the ingredients well together.
6.Serve slightly chilled, along with tortilla chips or as a topping in tacos, burritos, or fajitas.
