Sopes :

1 1/4 cups water , or as needed

Tomatillo Sauce :
1 cup tomatillos , husked
1 onion , halved
2 jalapeno peppers
1 pinch salt to taste
Pico de Gallo :
4 tomatoes , diced
2 avocados , diced
1 bunch fresh cilantro , chopped
3 limes , juiced
1/2 head cabbage , shredded
1/2 package queso fresco , crumbled

Instructions

1.In a bowl, combine brown sugar and sea salt. Rub onto tuna, wrap in plastic, and store in the fridge for 2 to 3 hours.
2.Preheat grill or smoker to medium heat. Smoke tuna until internal temperature reaches 120°F, approximately 30 minutes.
3.In a bowl, mix masa corn flour, water, and salt until it forms a smooth dough. Form into small balls and flatten into 1/4-inch thick discs, then fry in oil until golden brown.
4.Char tomatillos and onion on a grill or under a broiler. Grill jalapeños until charred on all sides. Combine them and salt in a blender until smooth.
5.In a separate bowl, mix together diced tomatoes, avocados, cilantro, lime juice, shredded cabbage, and crumbled queso fresco.
6.Assemble tacos with smoked tuna, tomatillo sauce, pico de gallo, and the fried masa discs.
