6 cold large eggs
21 ounces bulk Italian sausage
1/4 teaspoon dry mustard
1 pinch freshly grated nutmeg
1 pinch cayenne pepper
1 cup panko bread crumbs , or as needed
1/2 cup all-purpose flour , or as needed
2 eggs , beaten
The Scotch Egg is a traditional British dish that has been around since the 18th century. It consists of a hard-boiled egg wrapped in sausage meat, breaded, and deep-fried until crispy. Chef John's version is a slight deviation from the classic recipe, using Italian sausage, which adds a subtle blend of spices and herbs to the dish. Instructions

1.Preheat oil to 350 degrees F (175 degrees C).
2.Bring a pot of water to a boil, then carefully add the cold eggs. Boil for exactly 5 1/2 minutes, then immediately transfer to a bowl of ice water to cool.
3.In a large bowl, mix together the Italian sausage, dry mustard, nutmeg, and cayenne pepper.
4.Peel the boiled eggs and pat them dry with paper towels. Divide the sausage mixture into 6 equal portions.
5.On a piece of plastic wrap, flatten one portion of sausage mixture into a disc. Place a boiled egg in the center and wrap the sausage around the egg, sealing it well. Repeat with remaining eggs.
6.Set up 3 bowls for the flour, beaten eggs, and panko bread crumbs, respectively.
7.Roll each sausage-wrapped egg in flour, then dip in the egg mixture, and finally coat with the bread crumbs.
8.Fry the eggs in the preheated oil, turning occasionally, until golden brown, about 7-8 minutes. Drain on paper towels and serve warm.
