1 boneless pork shoulder blade roast
olive oil
1 tablespoon kosher salt , divided
1 tablespoon freshly ground black pepper
2 tablespoons chopped fresh sage leaves
2 tablespoons chopped fresh rosemary
1 orange , zested
6 cloves garlic , minced
2 teaspoons fennel seeds , lightly crushed
2 teaspoons olive oil
Vinegar sauce :
1/2 anchovy fillet
1 teaspoon red pepper flakes , or to taste
1/4 cup white wine vinegar
1/4 cup chopped Italian parsley
Porchetta is a classic Italian dish, made by roasting a whole pig seasoned with garlic, herbs and spices. Instructions

1.Preheat oven to 450 degrees F (230 degrees C).
2.Cut pork shoulder lengthwise, leaving the fat layer attached to one side, so that the meat opens like a book.
3.Brush both sides of the meat lightly with olive oil.
4.Sprinkle salt and black pepper over both sides, then evenly sprinkle sage, rosemary, orange zest, garlic, and fennel seeds over one half of the meat.
5.Roll the meat around the filling, and tie tightly with kitchen twine.
6.Brush the entire surface generously with olive oil.
7.Place the porchetta onto a rack in a roasting pan.
8.Roast in the preheated oven for 45 minutes.
9.Reduce heat to 350 degrees F (175 degrees C) and continue roasting until browned and tender, 1 1/2 to 2 hours more, for a total of 20 minutes per pound.
10.Remove porchetta from oven and let it rest for 10 minutes before removing twine and cutting.
