Chef John's Meringue With Strawberries and Kiwi is a light and fresh dessert that is perfect for summer. The meringues are made with just three ingredients - egg whites, sugar, and cornstarch - and are baked to perfection in the oven. The whipped cream is flavored with vanilla extract and sweetened with confectioners' sugar, and is mixed with fresh strawberries to add a burst of flavor. The kiwi fruit is sliced and added to the top of the dessert, adding a touch of tartness to balance out the sweetness of the cream and meringue. This dessert is perfect for anyone who wants something light and delicious after a meal.

Instructions

1.Preheat the oven to 300 degrees F (150 degrees C).
2.Line a baking sheet with parchment paper.
3.In a small bowl, whisk together the sugar and cornstarch.
4.In a large bowl, beat the egg whites until they form stiff peaks. Add the vanilla and vinegar and continue to beat for a few more seconds to combine.
5.Gradually add the sugar mixture to the egg whites, whisking constantly. Keep whisking until all the sugar has been added and the meringue is thick and glossy.
6.Spoon the mixture onto the prepared baking sheet, creating six individual meringues.
7.Bake the meringues for 1 hour, or until they are crisp and dry on the outside but still chewy on the inside. Turn off the heat and leave the meringues in the oven for a further 30 minutes to cool and dry out.
8.Meanwhile, in a large bowl, whip the heavy cream with the confectioners' sugar and vanilla extract until stiff peaks form.
9.Slice the strawberries into small pieces and mix them with the whipped cream.
10.To assemble the dessert, place each meringue onto a serving plate. Spoon the strawberry and cream mixture on top of each meringue.
11.Garnish the meringues with slices of kiwi fruit and serve immediately.

PROS

This recipe is perfect for anyone who wants to enjoy a light and fresh dessert.

The meringues are crispy on the outside and chewy on the inside, and the combination of strawberries, cream, and kiwi is both sweet and tangy.

CONS

The meringues can be quite fragile, so take care when removing them from the baking sheet and assembling the dessert.

Also, the heavy cream in this recipe makes it quite high in calories and fat, so it should be enjoyed in moderation.

HEALTH & BENEFITS

While not the healthiest dessert option, the fresh fruit in this recipe provides a good source of vitamins and minerals, including vitamin C, folate, and potassium.
Also, because this recipe uses egg whites instead of whole eggs, it is lower in cholesterol than many other dessert options.
