2 red bell peppers , halved and seeded
6 Fresno chile peppers
1 habanero pepper
2 tablespoons vegetable oil
1/4 teaspoon caraway seeds , or more to taste
1/4 teaspoon coriander seeds , or more to taste
1/2 teaspoon ground cumin
1/2 teaspoon dried mint
1 teaspoon kosher salt , or to taste
4 garlic cloves , peeled
1 lemon , juiced
1 tablespoon extra-virgin olive oil
Harissa is a North African hot chili pepper paste that is used as a condiment or seasoning. Instructions

1.Preheat oven to 450 degrees F (230 degrees C).
2.Place red bell peppers, Fresno chile peppers, and habanero pepper onto a baking sheet.
3.Roast in preheated oven for 20 minutes. Turn peppers and continue to roast until charred and blistered, about 20 minutes more.
4.Transfer peppers to a bowl and cover tightly with plastic wrap. Let peppers cool and steam, about 10 minutes.
5.Peel skin from peppers and discard. Remove and discard stems and seeds from Fresno and habanero peppers.
6.Heat vegetable oil in a skillet over medium heat. Add caraway and coriander seeds and toast for 1 to 2 minutes.
7.Combine toasted seeds, roasted peppers, cumin, dried mint, kosher salt, garlic, lemon juice, and extra-virgin olive oil together in a food processor.
8.Pulse until the harissa is completely smooth and homogenous. Refrigerate for up to a week, or freeze for up to a month.
