3 fresh eggs
1/4 teaspoon kosher salt
1/2 teaspoon cold water
2 tablespoons unsalted butter , divided
1 pinch cayenne or white pepper to taste ( optional )

Instructions

1.Crack 3 eggs into a small bowl and add kosher salt and cold water. Whisk until eggs are uniform in color and texture.
2.Place a nonstick pan over medium-high heat and add 1 tablespoon of unsalted butter. When butter has melted and starts to foam, pour eggs into the pan and immediately start stirring vigorously with a heat-proof rubber spatula.
3.As soon as the eggs start to form curds, tilt the pan to allow any uncooked eggs to flow to the bottom of the pan. Keep scrambling the eggs, stopping occasionally to let the eggs settle and firm up slightly.
4.When the eggs are almost set but still creamy, remove the pan from heat and add the remaining tablespoon of butter. Let it melt and swirl the pan to distribute it evenly.
5.Use the spatula to fold the omelette in half and slide it onto a plate. Sprinkle cayenne or white pepper on top if desired. Serve immediately.
