1 1/2 pounds skinless , boneless chicken thighs

2 tablespoons clarified butter ( ghee ) , or more as needed
1 onion , chopped
1/4 cup tomato paste
4 cloves garlic , finely grated
1 tablespoon finely grated ginger , or more to taste
1 cup crushed tomatoes
1 can coconut milk
1/2 cup chicken broth , or as needed
2 tablespoons chopped fresh cilantro
1/2 teaspoon red pepper flakes
salt and ground black pepper to taste

Instructions

1.Cut the chicken into bite-size pieces and toss them with vegetable oil, salt, garam masala, cumin, coriander, smoked paprika, turmeric, black pepper, cayenne, and cardamom in a large bowl.
2.Heat clarified butter in a large skillet over medium-high heat. Add the chicken and cook until browned on the outside.
3.Remove the chicken from the pan. Add onion to the same skillet and cook until softened.
4.Add tomato paste, garlic, and ginger to the onion and stir to combine.
5.Pour crushed tomatoes, coconut milk, and chicken broth into the skillet and stir to combine.
6.Bring the mixture to a simmer and add the chicken back to the skillet. Cook over low heat until the chicken is cooked through.
7.Add cilantro and red pepper flakes, then stir to combine.
8.Season with salt and black pepper to taste.
9.Serve over rice.
