Batter :
3 large eggs
1 cup all-purpose flour
1 cup milk
1/4 cup cold water
2 tablespoons vegetable oil
1 tablespoon white sugar

1 1/2 cups ricotta cheese , strained if wet
1/2 cup cream cheese
1 lemon , zested
1 large egg
2 tablespoons confectioners ' sugar
1 pinch salt

Instructions

1.Beat eggs in a mixing bowl until smooth.
2.Add flour, milk, water, vegetable oil, sugar, salt, and vanilla extract into the egg mixture; whisk until the batter is smooth.
3.Heat a nonstick skillet over medium-high heat. Pour 1/3 cup batter onto the skillet, swirling it to coat the entire bottom of the skillet; cook until the batter sets and the bottom begins to brown, 1 to 2 minutes.
4.Flip the blintz and cook until the other side is browned, about 30 seconds.
5.Remove the blintz to a plate and repeat with remaining batter.
6.Preheat oven to 375 degrees F (190 degrees C).
7.Mix ricotta cheese, cream cheese, lemon zest, egg, 2 tablespoons confectioners' sugar, and salt together in a bowl.
8.Lay each blintz on a work surface with the cooked side facing down.
9.Place a tbsp of cheese filling at one end of each blintz. Roll the filled end up like a burrito.
10.Heat butter in a skillet over medium heat. Place blintzes in skillet; cook until browned on all sides, about 2 minutes per side.
11.Transfer blintzes to a baking dish.
12.Bake for 12 minutes.
13.Dust blintzes with confectioners' sugar and serve.
