1 lemon , zested
1 tablespoon olive oil
1 boneless pork tenderloin
8 strips bacon

Instructions

1.Preheat oven to 425°F (220°C).
2.In a small bowl, combine fennel seeds, garlic, sage, black pepper, rosemary, salt, red pepper flakes, lemon zest, and olive oil to make the spice rub.
3.Rub the spice mixture all over the pork tenderloin.
4.Lay out the bacon slices on a cutting board, slightly overlapping, to form a rectangle big enough to wrap the pork tenderloin.
5.Place the pork on top of the bacon and use the bacon slices to wrap the pork tightly, tucking the ends of the bacon slices underneath.
6.Place the pork on a wire rack set over a rimmed baking sheet.
7.Roast for 25-30 minutes or until an internal thermometer reads 145°F (63°C).
8.Remove from the oven and let it rest for 5 minutes before slicing and serving.
