Ingredients

1 lb jumbo pasta shells
16 ounces ricotta cheese ( I used part-skim )
1/2 cup parmesan cheese , grated , divided
2 cups mozzarella cheese , shredded , divided
2 eggs
2 tablespoons garlic powder
2 tablespoons italian seasoning
salt and pepper
2 tablespoons olive oil
1 garlic clove , chopped
1 can Italian-style stewed tomatoes
1 jar marinara sauce

Instructions

1.Preheat oven to 375°F.
2.Prepare pasta according to package instructions and drain.
3.In a large bowl, mix ricotta cheese, half of the parmesan cheese, 1 cup of mozzarella cheese, eggs, garlic powder, italian seasoning, salt, and pepper.
4.Stuff each pasta shell with the cheese mixture.
5.In a separate pan, heat olive oil and chopped garlic over medium heat until aromatic.
6.Add stewed tomatoes and marinara sauce, stirring frequently.
7.Pour 1/2 of the sauce into a baking dish.
8.Arrange stuffed shells on top of the sauce, then pour remaining sauce over the top.
9.Sprinkle with remaining parmesan and mozzarella cheese.
10.Cover with foil and bake for 25 minutes.
11.Remove foil and bake for an additional 10-15 minutes or until cheese is melted and bubbly.
