Ingredients

1 can black beans
2 fresh garlic cloves , minced
1 teaspoon apple cider vinegar
1 teaspoon complete seasoning ( ground cumin , garlic powder , salt )
2 ears fresh corn
2 tablespoons butter or 2 tablespoons margarine
salt
white pepper
1 red pepper
1 bunch fresh cilantro , chopped
1/2 cup scallion , chopped
1 lime
3/4 cup shredded monterey jack cheese ( or pepper jack )

This Cheesy Roasted Corn & Red Pepper Black Bean Dip is a delicious appetizer that's perfect for any party or gathering. The savory black bean mixture is topped with sweet roasted corn, tangy red peppers, and melted cheese. The combination of flavors and textures makes this dip a crowd-pleaser for any event. Instructions

1.Preheat your oven to 350°F.
2.In a food processor, combine drained black beans, garlic, apple cider vinegar, and complete seasoning until smooth. Set aside.
3.Shuck the fresh corn, coat each ear of corn with butter or margarine, and sprinkle with salt and pepper. Wrap each ear in Reynolds Wrap Foil and place them in the oven for 20 minutes. Then, remove the foil and roast the corn a further 10 minutes or until soft and caramelized.
4.Cut the red pepper into small pieces and sauté in a pan until slightly browned. Add chopped cilantro and scallions to the pan and cook for another 2 minutes.
5.Remove the roasted corn from the oven and when cool enough to handle, cut the kernels off the cobs.
6.To assemble, spread the black bean mixture on the bottom of a baking dish. Then, layer the red pepper-cilantro-scallion mixture on top of the black beans. Finally, sprinkle the roasted corn kernels and monterey jack cheese over everything.
7.Put in the oven and bake for 15-20 minutes or until the cheese is bubbly and golden brown.
8.Remove from the oven and let it cool for a few minutes. Squeeze fresh lime juice over the top and serve with chips or crackers. Enjoy!
