1/4 cup shredded cheese ( cheddar , parmesan , whatever you like )
1 large egg
salt

Instructions

1.Rinse quinoa thoroughly and combine with water in a pot. Bring to a boil over high heat.

3.Meanwhile, chop broccoli florets into small pieces and steam until tender.
4.In a large bowl, combine cooked quinoa, steamed broccoli, diced onion, breadcrumbs, shredded cheese, egg, salt, and pepper. Mix well.
5.Heat a large skillet over medium-high heat and add olive oil. Form patties out of the quinoa mixture using your hands and place into the skillet.
6.Cook for 3-4 minutes on each side, until golden brown and crispy.
