Ingredients

2 1/2 lbs yellow-fleshed potatoes , peeled and cut into chunks ( about 6 )
salt and pepper
2 cups milk , divided
3/4 cup Canadian cheddar cheese , shredded , divided
2 lbs lean ground beef
4 garlic cloves , finely chopped
1 large onion , chopped
1 1/2 teaspoons dried Italian herb seasoning
3 tablespoons all-purpose flour
1 can stewed tomatoes
1/2 cup barbecue sauce , divided ( approx )
2 cups frozen peas and corn ( or small cut-up mixed vegetables )
1/2 teaspoon pepper sauce

Instructions

1.Preheat oven to 375°F (190°C).

7.Combine the remaining 1 cup of milk and 1/4 cup of barbecue sauce. Pour over the potatoes.
8.Sprinkle the remaining 1/4 cup of cheese over the top.
9.Bake for 30-35 minutes or until the cheese is melted and the potatoes are lightly browned.
