Ingredients

4 large potatoes
1 large onion
1 1/2 cups grated cheddar cheese ( or cheese of choice-a mix of cheddar and Swiss is good )
1/4 cup chicken stock ( I use vegetarian broth )
butter , for topping
paprika
salt and pepper
garlic powder ( optional )

Instructions

1.Preheat oven to 375F.
2.Slice the potatoes and onions into thin rounds.
3.Grease a 1.5-quart casserole dish with butter.
4.Layer half the potatoes and onions on the bottom of the dish, season with salt and pepper and sprinkle with cheese.
5.Repeat with the remaining potatoes and onions, seasoning and cheese.
6.Pour the chicken stock over the top.
7.Top with a dusting of paprika and swirls of butter.
8.Cover with foil and bake for 50 minutes.
9.Remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
10.Let the hotpot cool for a few minutes, and serve hot.
