Instructions

1.In a saucepan, bring 2 cups water to a boil and add the rolled oats and 3 tablespoons butter.
2.Cook over low heat for 2 minutes, stirring occasionally. Remove from heat and let cool to lukewarm.
3.In a mixing bowl, combine 2 cups flour, yeast, sugar, and salt. Add the oat mixture and egg to the mixing bowl and beat for 2 minutes at medium speed.
4.Stir in enough remaining flour to make a stiff dough. Knead on a floured surface until smooth and elastic, about 8 minutes.
5.Place dough in a greased bowl, cover and let rise in a warm place until doubled, about 1 hour.
6.Punch dough down, and roll out into a 14x10-inch rectangle. Spread shredded mozzarella cheese over the dough. Sprinkle 1 tablespoon grated parmesan cheese, 1/2 teaspoon dried basil, 1/4 teaspoon dried oregano, and 1/2 teaspoon garlic powder on top of the cheese.
7.Roll up tightly, pinching edges to seal. Place in a greased 9x5-inch loaf pan. Brush with melted butter. Cover and let rise until doubled, about 1 hour.
8.Preheat oven to 375°F. Bake for 35-40 minutes or until golden brown. Remove from pan and cool on wire rack.
