Ingredients

4 ripe plantains
1 tablespoon olive oil
2 yellow onions , thinly sliced
2 red peppers , thinly sliced
2 large garlic cloves , minced
1 rotisserie chicken , meat removed and shredded
1 teaspoon salt
1 can tomato sauce
1/2 cup chicken stock
1 can black beans , drained and rinsed
8 ounces shredded cheddar cheese

Instructions

1.Preheat oven to 375°F.
2.Peel and slice the plantains into 1/4 inch rounds.

10.Remove the foil and bake for another 10-15 minutes until the cheese is melted and bubbly.
11.Let cool for a few minutes before serving.
