1/2 cup reduced-fat sharp cheddar cheese
1/2 cup part-skim mozzarella cheese ( or Monteray or Colby Jack )
2 tablespoons fresh cilantro leaves ( chopped )
2 tablespoons southwest seasoning ( basically garlic powder , chili powder , oregano , cumin )
1 tablespoon Smart Balance light butter spread
4 -6 toothpicks

Instructions

1.Cook Morningstar Farms spicy black bean burgers according to directions, and roughly chop.
2.In a medium bowl, mix together chopped black bean burgers, salsa, sharp cheddar cheese, mozzarella cheese, cilantro, and southwest seasoning.
3.Melt the butter spread in a large skillet over medium heat.
4.Take one tortilla and place about 1/4 cup of filling on one half.
5.Fold the other half of the tortilla over the filling, creating a semi-circle.
6.Cook the quesadilla in the skillet for about 2-3 minutes on each side, or until the tortilla is crispy and the cheese is melted.
7.Repeat with the remaining tortillas and filling.
8.Cut each quesadilla into 4 triangles and secure with a toothpick before serving.
