Ingredients

4 large baking potatoes
200 g assorted cheese , grated ( or mashed )
4 spring onions , trimmed and chopped into small pieces
1/2 teaspoon English mustard powder
25 g salted butter
1 little salt & freshly ground black pepper
chopped chives , to serve
Cheeseboard Supper Potatoes are a delicious and hearty meal that's perfect for a cozy night in. Baked potatoes are filled with a mixture of grated cheese, spring onions, mustard powder, and butter, then topped with chopped chives. The result is a dish that's creamy, cheesy, and oh-so-satisfying.

Instructions

1.Preheat the oven to 200°C/180°C fan/gas mark 6.
2.Prick the potatoes all over with a fork and place on a baking tray.
3.Bake in the oven for around an hour, or until they're cooked through.
4.Once the potatoes are done, carefully slice off the top of each one and scoop out the insides into a bowl.
5.Add the grated cheese, spring onions, mustard powder, and butter to the bowl, then mix everything together.
6.Season with salt and pepper to taste.
7.Spoon the mixture back into the potato skins and place them back onto the baking tray.
8.Bake in the oven for 10-15 minutes more, or until the cheese is melted and bubbly.
9.Serve topped with chopped chives.
