Ingredients

3 1/2 cups flour
1 tablespoon salt
1 tablespoon sugar
1 teaspoon instant dry yeast
2 tablespoons olive oil
1 1/4 cups lukewarm water
1 cup za'atar spice mix ( spice mixture with dried thyme )
1/2 cup extra-virgin olive oil
1 lb akkawi cheese ( can use a combination of both or can sub any white cheese you like ) or 1 lb mozzarella cheese ( can use a combination of both or can sub any white cheese you like )

Instructions

1.In a large mixing bowl, combine flour, salt, sugar, and instant dry yeast.
2.Add 2 tablespoons of olive oil and lukewarm water. Mix with a wooden spoon until well combined.
3.Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
4.Place the dough in a large greased bowl, cover it with a damp kitchen towel, and let it rest for 30 minutes.
5.Preheat the oven to 450°F. Mix za'atar spice mix with a 1/2 cup of extra-virgin olive oil.
6.Cut the akkawi cheese into small cubes.
7.Punch down the dough, divide it into 4 equal parts. On a floured surface, roll out each dough into the desired rectangular shape.
8.Lightly brush each flatbread with za'atar mixture. Add cheese cubes, spreading them evenly onto each flatbread.
9.Place flatbread on a baking sheet, put it in the oven and bake for 15 minutes until the edges are golden brown and the cheese is melted.
