Ingredients

6 large potatoes , peeled and cubed
2 cans chicken broth
3 tablespoons olive oil
3 tablespoons butter
1 large onion , diced
1 cup sliced mushrooms
salt and ground black pepper to taste
8 ounces grated Swiss cheese

Instructions

1.Boil the potatoes in chicken broth until they are soft.
