Instructions

1.Preheat oven to 375F.
2.Chop the garlic and shallot, and combine with sweet paprika, salt, pepper, dried basil, dried rosemary and 1/3 cup of butter. Mix well.
3.Spread the garlic herb butter over the tortillas and sprinkle cheddar cheese on half of each tortilla.
4.Fold the other half of the tortilla over the cheese, pressing down gently.
5.Melt remaining 1/3 cup of butter in the microwave.
6.Using a brush, coat the outside of the quesadillas with butter.
7.Place quesadillas on baking trays and bake for 15-20 minutes, flipping halfway through.
8.For the dipping sauce, mix together sour cream and roasted garlic.
9.Serve the cheese quesadillas with the roasted garlic dipping sauce.
