4 -5 eggs
4 ounces gruyere cheese
1 egg , beaten ( to mix with 1/2 teaspoon salt , for glaze )
2 -3 tablespoons grated gruyere cheese

Instructions

1.Preheat the oven to 200 Celsius. Grease the baking sheet.
2.In a medium saucepan, bring water, salt, and butter to a boil. Remove the pan from the heat and add flour. Mix it with a spoon.
3.Then put the pan back on the heat and stir continuously until the dough pulls away from the sides and forms a ball.
4.Put the dough into a bowl. Add the eggs one at a time and mix well after each egg. Gently add grated gruyere cheese.
5.Drop spoonfuls of dough onto the prepared baking sheets, spacing them 2 inches apart.
6.Brush the puff with egg and salt glaze. Sprinkle grated cheese on top.
7.Bake 15 minutes. Reduce the heat to 180 Celsius and bake for another 20 minutes or until golden brown.
