150 g sliced bacon ( I use middle rashers and remove rinds and all fat )
2 sheets puff pastry , each cut into 4 squares
150 g cheese , something well-flavoured such as cheddar or 150 g gruyere , cut into cubes , plus
50 g cheese , grated for sprinkling over the pies
1 cup sour cream
1 teaspoon dried sage
1 beaten eggs or 1 milk , for glazing

Instructions

1.Preheat the oven to 200°C.
2.Heat the olive oil in a frying pan over medium heat and add the onions. Cook, stirring occasionally, for 25-30 minutes until they are soft and caramelized.

4.Place the puff pastry squares on a baking sheet lined with parchment paper.
5.In a bowl, mix together the caramelized onion and bacon mixture, cheese cubes, sour cream, and dried sage. Spoon the mixture onto each pastry square, leaving a small border around the edge.
6.Brush the beaten egg or milk around the border of each pastry square and sprinkle grated cheese on top.
7.Bake for 25-30 minutes until the pastry is golden brown and crisp and the filling is hot and melted. Serve hot.
