Ingredients

4 jacket potatoes , cooked
knob butter
1 tablespoon Dijon mustard
2 eggs , separated
100 g smoked mozzarella cheese , diced
75 g honey-roasted ham , roughly chopped
3 tablespoons chives , snipped
salt & pepper

Instructions

1.Preheat your oven to 200C/fan 180C/gas 6. Whilst the potatoes are still warm, cut a small slice off the top and scoop out most of the potato into a large mixing bowl.
2.Mash the potato together with the butter and mustard until smooth, then stir in the egg yolks.
3.Whisk the egg whites until stiff, tip onto the mashed potato and fold in, then add the cheese, ham and chives.
4.Season with salt and pepper, then put back into the potato skins, sprinkle with a little extra cheese, red pepper flakes and bake for 20-25 minutes in the oven until golden.
