Ingredients

3 ripe plantains ( yellow stage )
2/3 cup cheddar cheese ( shredded )
2 eggs
1/4 teaspoon salt
1 tablespoon flour
1 tablespoon water
toothpick
vegetable oil ( for frying )

Instructions

1.Peel the plantains and cut them in half. Boil them in salted water for 15 minutes. Drain them and mash them.
2.In a mixing bowl, add the mashed plantains, eggs, flour, water, and salt. Mix it all well.
3.Heat the vegetable oil in a frying pan on medium-high heat.
4.Make small ball shapes out of the mixture and press it flat with your hands. In each flat shape put a tablespoon of the shredded cheese in the center and close it, giving it the round or oblong shape of a meatball.
5.Fry the fritters in the hot oil until turning golden brown, about 2-3 minutes on each side. Drain on paper towel. Once cooled down a bit, prick each one with a toothpick.
6.The Cheese Filled Plantain Fritters (Piononos) are now ready to serve.
