Ingredients

1 1/2 cups couscous
2 1/4 cups water
1 cup butter , cut in small pieces
1 egg , lightly beaten
1 pinch salt
1 3/4 cups ricotta cheese
7 ounces cheese , grated ( such as mozzarella or monterey jack )
1 1/2 cups clear honey
2 -3 pinches saffron threads ( cinnamon may be substituted )
1/2 cup water
1 teaspoon orange flower water ( lemon juice may be substituted )
6 tablespoons chopped shelled pistachios

Instructions

1.Preheat the oven to 375°F.
2.In a saucepan, bring the water to a boil. Add the couscous and stir. Cover and remove from heat. Let it stand for 15-20 minutes, or until the couscous is cooked.
3.Meanwhile, in a small saucepan, melt the butter. Remove from heat and let it cool slightly.
4.Scramble the egg and add it to the cooled butter. Add salt and mix. Pour the mixture over the couscous and stir well.
5.Grease a 9x13 inch baking pan. Spread half of the couscous mixture evenly into the pan (reserving the other half).
6.Mix together the ricotta cheese and grated cheese. Spread the cheese mixture evenly over the top of the couscous in the pan, leaving a half inch edge around the border.
7.Cover the cheese with the remaining couscous mixture and spread evenly, pressing down lightly.
8.Bake for 30-35 minutes or until the top is golden brown.
9.In a saucepan, combine honey, saffron threads (or cinnamon), water, orange flower water and bring to a boil. Let it simmer for about 7-8 minutes until the syrup thickens slightly. Remove from heat and let it cool down.
10.Pour the syrup over the warm Kodafa. Garnish with chopped shelled pistachios.
