The babka has become popular in recent years and can now be found in bakeries and pastry shops throughout the United States. It is a delicious and festive addition to any holiday table.

Instructions

.Sprinkle 1 tablespoon of sugar over warm water in a small bowl. Add the yeast and stir until it dissolves. Set aside.
.Warm the milk in a small pan over low heat. Add 1/3 cup white sugar and stir until it dissolves.
.In a large bowl, combine the yeast mixture with the milk mixture. Add the softened butter, beaten egg yolks, salt, and 3 cups of flour, stirring until the dough comes together.
.Turn the dough out onto a floured surface and knead for 10 minutes, adding flour if it is too sticky. Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 1 hour.
.In a separate bowl, beat together the softened cream cheese, white sugar, egg yolks, orange zest, and vanilla extract until smooth.
.Preheat the oven to 350°F. Roll out the dough to a 1/2 inch thickness. Spread the cream cheese filling evenly over the dough, leaving a 1 inch border around the edge. Starting at one end, roll the dough up tightly and pinch the edges to seal.
.In a small bowl, mix together the white sugar, flour, and cubed butter to form a crumbly mixture. Sprinkle the crumb topping and sliced almonds over the dough. Brush the top of the babka with egg white.
.Bake for 40-45 minutes, or until golden brown and crispy. Let cool before slicing and serving.
