Ingredients

2 tablespoons extra virgin olive oil
4 garlic cloves , minced
1/2 cup onion , minced
1 tablespoon chili powder
1 teaspoon dried basil
1/4 teaspoon black pepper , ground
1/4 teaspoon salt
1/2 teaspoon cumin , ground
2 teaspoons dried parsley
2 teaspoons sugar
1/2 cup salsa ( I use Pace mild or med . )
12 ounces tomato paste
2 cups beef broth ( = 1 can , can sub chicken or vegetable )
1 cup water
good smoky ancho chili-based hot sauce , a couple splashes ( I use Coyote Cocina Ancho Hot Sauce from Santa Fe , NM www.santafeseasons.com )
2 teaspoons fresh cilantro
8 -10 small corn tortillas
1 1/2 lbs grated cheese , grated
1/2 small onions or 1/2 medium onion , diced finely
3 7/8 ounces sliced black olives , ripe
2 ounces green chilies , diced
Cheese enchiladas are a staple of Mexican cuisine, and for good reason! This delicious dish is made with soft corn tortillas stuffed with melted cheese and smothered in a flavorful red sauce. Instructions

1.Preheat your oven to 350 F.
2.In a saucepan, heat the oil over medium-high heat until hot.
3.Add the garlic and onion, and sauté until the onion is translucent and the garlic is fragrant.
4.Add the chili powder, basil, black pepper, salt, cumin, parsley, sugar, salsa, tomato paste, beef broth, water, hot sauce and cilantro. Bring to a boil, then reduce the heat and let the sauce simmer for about 15 minutes.
5.In a separate pan, heat the tortillas over medium heat until they are hot and pliable.
6.In another bowl, mix 1 1/4 cups of the sauce with half of the grated cheese.
7.In a baking dish, spread a small amount of sauce on the bottom to prevent sticking. Fill each tortilla with about 2 tbsp of the cheese mixture and roll up. Place the rolled tortilla seam-side down in the baking dish.
8.Pour the remaining sauce over the enchiladas, and sprinkle the remaining cheese on top.
9.Top with the diced onions, black olives, and green chilies.
10.Bake for 20-25 minutes, or until the cheese is melted and the enchiladas are heated through.
