Ingredients

1 cup chopped onion
1 1/2 cups shredded cooked chicken breasts ( about 1/2 lb )
1 cup reduced-fat sharp cheddar cheese , divided
1 cup picante sauce
3 ounces neufchatel cheese , diced
1 teaspoon cumin
1 1/2 cups bottled green taco sauce
8 6-inch flour tortillas
Cheese and Chicken Enchiladas (OAMC) are a popular Mexican dish that is perfect for a quick and tasty meal on a busy weeknight. This recipe is easy to make and can be prepared in advance for busy weeknights or for an OAMC (once-a-month cooking) session. The enchiladas are loaded with tender chicken, sharp cheddar cheese, and flavorful spices, all rolled up in soft and warm flour tortillas. Instructions

1.Preheat oven to 350°F.
2.Coat a large nonstick skillet with cooking spray.
3.Place skillet over medium heat and add onion.
4.Cook and stir until onion is tender, about 5 minutes.
5.Add shredded chicken, 1/2 cup cheddar cheese, picante sauce, neufchatel cheese, and cumin.
6.Cook and stir until cheese is melted, about 10 minutes.
7.Pour green taco sauce into shallow dish.
8.Dip each tortilla into sauce to coat.
9.Spoon about 1/4 cup filling down center of each tortilla.
10.Roll up and place seam-side down in greased 13x9 inch baking dish.
11.Pour remaining taco sauce over enchiladas.
12.Top with remaining cheddar cheese.
13.Cover dish tightly with foil and bake 30 minutes.
14.Uncover and bake until cheese is melted and bubbly, about 10-15 minutes.
15.Let stand for a few minutes before serving.
