Ingredients

50 g lardons or 50 g bacon , chopped into small dice
1 tablespoon olive oil
450 g meaty sausages
4 lean pork chops , cut into large pieces
400 g tinned beans
haricot beans or butter beans
1 onion , peeled & diced
4 carrots , peeled & diced into biggish chunks
400 g chopped tomatoes
400 ml chicken stock
200 ml red wine
1 teaspoon sugar
2 garlic cloves ( or more )
50 g breadcrumbs
1 bouquet garni
Cassoulet is a traditional French dish that originated in the region of Occitanie, and typically contains meat, beans, and a tomato-based sauce. This recipe is a simplified take on the classic dish, using a crock pot or Le Creuset to slow cook the meats and vegetables for maximum flavor. Instructions

1.Heat a tablespoon of olive oil in a frying pan and cook the lardons or bacon for a few minutes until crispy, then add in the sausages and pork chops. Brown on all sides, then set aside.
2.In the same pan, sauté the onions and carrots until soft.
3.Add in the chopped tomatoes, chicken stock, red wine, sugar, garlic, and bouquet garni. Bring to a boil.
4.Place the beans in a 4 quart/3.8 liter casserole or crock pot. Arrange the browned meat and sautéed vegetables on top.
5.Pour in the tomato and wine mixture to cover the meat and vegetables.
6.Cover and cook on high for 4-5 hours in the crock pot, or 2-3 hours in a Le Creuset on the stove.
7.Half an hour before serving, sprinkle breadcrumbs over the top and allow to brown slightly.
