Ingredients

1 package saffron rice mix ( I like Vigo Yellow Rice )
1 tablespoon butter or 1 tablespoon olive oil
2 1/2 cups water
1 - 1 1/4 lb boneless skinless chicken breast
1/2 teaspoon chopped garlic
fresh cracked pepper
1/4 cup chopped onion ( fresh or frozen )
1/2 cup chopped bell pepper ( fresh or frozen )
1/2 cup peas ( fresh or frozen ) or 1/2 cup green beans ( fresh or frozen )
Paella is a popular dish from Spain, which can taste different depending on the region. This recipe is called 'Cheater's Paella' because it uses a saffron rice mix instead of the traditional method of cooking rice directly in broth. Instructions

1.Preheat oven to 375°F
2.In a skillet, sauté chopped onions and bell peppers in butter/oil until soft
3.Add garlic and sauté for one more minute
4.Add chicken and cook for 7-8 minutes until browned
5.Add the package of saffron rice mix to the skillet and mix thoroughly with the chicken and vegetables
6.Mix in three cups of water and bring to boil
7.Once boiling, remove from heat and transfer to a large oven-safe baking dish
8.Sprinkle additional black pepper over the top and bake for 25-30 minutes until the liquid is absorbed and the rice is fully cooked
