1 cup arborio rice
3/4 cup white wine
4 garlic cloves
1 medium onion , finely chopped
1 shallot , finely chopped
1 teaspoon butter
1 teaspoon olive oil
2 cups chicken broth
2 ounces romano cheese , finely grated
Cheater Risotto is a simpler version of the traditional Italian risotto recipe that makes use of arborio rice, flavored with garlic, onion, shallot, cheese, and white wine. It is cooked in a single skillet and requires lesser stirring and lesser attention, making it perfect for busy days. This recipe may not be similar to the original in terms of traditional recipe taste; however, it has a distinct taste and is just as filling and satisfying. Instructions

1.Preheat a large skillet over medium-high heat.
2.Add in the olive oil and butter to melt.
3.Add the garlic, onion, and shallot and sauté for about 5 minutes or until the onion is translucent.
4.Add the arborio rice into the skillet and sauté for around 3 minutes or until the rice starts to look slightly toasted.
5.Pour in the white wine and stir until it has been absorbed by the rice.
6.Add chicken broth to the skillet and stir, covering the skillet and simmer until the rice is cooked for around 15 minutes.
7.Take off the heat and stir in the grated cheese.
8.Add the peas and stir.
9.Serve hot with grated cheese on top.
