Ingredients

1 lb ground turkey or 1 lb beef , browned
1 can chicken ( optional ) or ( 16 ounce ) can cubed cooked chicken breasts ( optional )
1 lb acini di pepe pasta , no . 70 organic whole wheat pasta , cooked or 1 lb other tiny pasta , cooked
1 red onion , diced
1 green pepper , diced
1 -2 tablespoon minced garlic
1 can tomato paste
2 cans diced tomatoes , undrained
1 can black beans , rinsed ( or bean of your choice )
1 can white corn kernels , drained
1 can enchilada sauce ( or less , depending on taste preference )
1 package old el paso mild taco seasoning
1 package ranch dressing , dry
1 container of progresso chicken broth
salt , to taste
pepper , to taste
cayenne pepper , to taste ( approx 1-2 tsp for medium heat )

Instructions

1.Brown the ground turkey or beef in a large pot over medium heat.

4.Add the cooked acini di pepe pasta, black beans (rinsed), white corn kernels (drained), and enchilada sauce.
5.Mix in the old el paso mild taco seasoning, ranch dressing (dry), and cayenne pepper.
6.Add the container of progresso chicken broth and bring to a simmer.
7.Allow to cook for 10-15 minutes, stirring occasionally.
8.Add salt and pepper to taste.
9.Serve hot with a sprinkle of cheese and chopped cilantro (optional).
