Ingredients

1 kg large raw shrimp
4 garlic cloves , crushed
3 tablespoons lime juice
1 teaspoon ground cumin
1/2 cup fresh coriander leaves , chopped
lime wedge , to serve
1 small red capsicum
6 garlic cloves , unpeeled
1 tablespoon olive oil
1/3 cup whole-egg mayonnaise
1 tablespoon lemon juice
Charred Prawns (Shrimp) with Capsicum Mayonnaise is a delicious and healthy meal that can be enjoyed at any time. Instructions

1.Rinse the shrimp under cold running water and devein them.
2.In a large mixing bowl, combine the garlic, lime juice, cumin, and coriander.
3.Add the shrimp to the marinade and toss to coat.
4.Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
5.Preheat your grill to medium-high heat.
6.Skewer the shrimp and grill for about 2-3 minutes per side, until they are pink and slightly charred.
7.For the capsicum mayonnaise, preheat the oven to 200°C.
8.Cut the capsicum in half, discard the seeds and stem and place the capsicum and garlic cloves on a baking tray lined with baking paper.
9.Drizzle the olive oil over the capsicum halves and garlic and roast in the oven for 30-35 minutes until they are soft and tender.
10.Remove from the oven and allow them to cool.
11.Peel and discard the skin of the garlic cloves.
12.In a blender or food processor, pulse the roasted capsicum and garlic until they are finely chopped.
13.Add the mayonnaise and lemon juice, and blend until the mixture is smooth.
14.Serve the charred shrimp hot on a platter with the Capsicum Mayonnaise and a slice of lime on the side.
