Ingredients

2 medium tomatoes , chopped
1 tablespoon cumin seed
1 teaspoon mustard seeds
1/4 cup oil , to fry ladyfinger
3/4 teaspoon salt
1/2 lb okra ( bhindi )
2 tablespoons oil , for seasoning
2 medium onions , chopped

Instructions

1.Cut the okra into 1-inch pieces and set aside.
2.In a pan, heat 1/4 cup of oil over medium-high heat.
3.Add the okra and salt and fry until golden brown and crispy.
4.Remove the okra from the pan and set aside.
5.In the same pan, add 2 tablespoons of oil and heat over medium heat.
6.Add cumin seeds and mustard seeds and cook until they start to pop.
7.Add onions, green chili, turmeric powder, coriander powder, and red chili powder. Stir well and cook for 5 minutes.
8.Add chopped tomatoes and cook until the tomatoes are soft.
9.Add the fried okra and mix well. Cook for 5-7 minutes more.
